Teton Canyon/Alaska Basin trail - drive to end of road, hike in as far as you'd like. Gradual, moderate trail, nice flowers in the summer.
Sheepbridge trail - park in the first parking lot you get to, do not go onto the canyon road past the gate. Cross the bridge over the small creek on the right hand side of the parking lot. Cut across a meadow to the forest. You will cross a large bridge and then the trail will turn left and go up canyon. Only a few miles, easy, family friendly. Couple places to stop at the creek.
Mill Creek trail - Same parking lot, first one in the canyon. But on the left side. Moderate to steep trail but in only a couple of miles you reach a stunning, big view of the Tetons. This is the shortest way to get views of the backcountry.

Sightseeing suggestions below. Yellowstone is huge! Worth the visit but be prepared for a big day. The park roads are shaped like a figure 8, with a top and bottom loop. If you could only do one section most people would do the bottom loop. If you can, both are wonderful.
Bottom loop highlights - Norris Geyser Basin (one of my favorite places in the park to walk on the boardwalks), Old Faithful, Hayden Valley, Grand Canyon of the Yellowstone, Grand Prismatic, Artist Paint Pots.
